Water-lemon Crush

  • 550g chopped watermelon (yellow or pink)
  • Juice of 1 lemon and lime
  • Handful of fresh basil or mint
  • 1 cup of ice

  1. Add all ingredients to a high speed blender and pulse and blend until all ice is crushed. Serves one large tall glass or two small glasses.

I know what you are thinking, “that is not watermelon”. And “what are those green bits”?

Well in fact, this IS a watermelon… only the champagne type. If you closed your eyes and ate them side-by-side you would hardly notice the difference. The yellow one seems mildly less sweet perhaps.

Those green bits? That is the beautiful basil. Before you cringe your nose at the thought, do not knock the fresh flavour of adding herbs to fruit juices and smoothies. The first time I tried basil with fruit was in a lime sorbet at Frosty Mango between Townsville and Cairns. The basil takes the lime to a whole new zesty level. Fresh mint leaves works just as well.

Make this healthy drink to start your day, at a dinner party, or make it a bit naughty and add a dash of alcohol.
