Supercharged Choc Chia Pudding

  • ¼ cup chia seeds
  • ½ cup unsweetened almond milk
  • 1tsp vanilla essence ½ Tbs Power Super Foods Maca/Cacao blend (or ¼ Tbs each of maca and cacao)
  • 1 Tbs Coconut Palm Sugar
  • ½ sliced banana 1 Tbs Power Super Foods Cacao crunch or cacao nibs

  1. Place all ingredients but banana and cacao nibs in a small bowl and mix through. Cover and place in fridge over night or two hours before serving.
  2. Serve with sliced bananas or other fruit and sprinkle with cacao nibs.

You will want to get up early just because you know this baby will be waiting in the fridge for you to happily and unguiltingly plunge into.

Chia seeds have to be one of the biggest rages of the past three years, and there is good reason for that. You know, all that good superfood stuff like protein, iron, calcium, omega 3, fibre and other awesome essentials for the body like magnesium and antioxidants.

So you get the picture, chia seeds are the coolest seed on the block. But often people ask, what on earth do I do with these tiny crunchy seeds? I guess you can just about put them in anything, even straight  water for a cool jelly-like drink.

But when chia puddings came about, things really started to get exciting. I have boosted my chia pudding that one step further by adding even more super goodness with the likes of cacao, maca and the low GI natural sugar; coconut palm nectar.

This brilliant breakfast is so packed with energy, that my feet are still tapping and bouncing while I write this post. Cacao contains theobromine which acts similar to caffeine but on a smaller and less harmful scale. Maca Powder is not only an energy boosting superfood, it is also an adaptogen meaning it  strengthens the body to ‘adapt’ and overcome common ailments and stresses. And just a little bit on coconut palm nectar. It is much like brown sugar, yet with a desirably lower glycemic index of just 35, which is even lower than honey (GI 55) and agave nectar (GI 42). Cane sugar is a whopping GI 68.  This makes coconut nectar reportedly suitable for some diabetics (consult doctor first of course).

Loading all these nutritious foods with bananas and cacao nibs are what gives you this yummy yet healthy morning meal – a supercharged choc chia pudding.
